Yesenia, who grew up milking cows on her father’s farm in the Dominican Republic, and David, who learned to care for sheep on his family farm in Vermont, joined their worlds to create something truly special: Invierno, meaning “winter” in Spanish.

This mixed-milk cheese combines the rich, creamy sheep’s milk from their own pastures with fresh cow’s milk from a small local dairy. Aged for 4–5 months, Invierno carries beautiful notes of butter, chanterelle mushrooms, and gentle earthiness.

At Halal Meat Boston, we proudly offer their two-year reserve version, aged in Vermont’s cool cheese caves. Its deep, caramelized flavor and firm, chewy texture make it a perfect companion for cozy evenings, paired with cider, wine, or simply good company.
