This cut is created from the 5th to the 6th rib. It is then separated from
the short rib and the ribs are cut perpendicular to the eye at 8". The rib
cap, cartilage, spine bone, and dorsal tendon are removed. The rib
bones are denuded to 100% of the rib rack at 8" +/- length, ready to be
cut with a knife between the ribs.
